Liver Pate’

1 lb Braunsweiger Liverwurst

8 oz Philadelphia cream cheese (soft)

½ tsp onion juice

½ tsp garlic juice

1 tsp mayonnaise or Miracle Whip

1/8 tsp Tabasco sauce (optional)

Mix with mixer.  Refrigerate.  Serve with Ritz crackers (or any other type you choose!).  I have never been much of a Liverwurst eater, but this stuff is truly addicting!

Stuffed Mushrooms

8 oz Philadelphia cream cheese (soft)

1 Tbsp parsley

1 Cup shredded cheddar cheese

1 jar Real Bacon Bits

2 packages fresh mushrooms

1 Tbsp melted butter

Combine cream cheese, parsley, shredded cheese, and bacon bits.  Clean mushrooms and remove stems.  Stuff the caps with the cream cheese mixture.  Dip the mushroom caps I butter.  Bake 20 minutes at 350° F.  Who doesn’t like bacon???

Quick Cheese Ball

2 Packages 8 oz Philadelphia cream cheese (soft)

1 package dry Hidden Valley Ranch mix

2 Cup shredded cheddar cheese

3 Tbsp sour cream

Mix and serve with your crackers of choice.  Quick, easy, and appealing to most palates!

I think I have all the food groups covered here, except for fruit. That’s why I’ll be enjoying a glass of wine while I watch the game!

I decided to review the events of that era, and found very tragic accounts of murder, suicide, and  increases in child neglect, divorce rates and alcohol abuse.  The farm crisis not only affected farmers, but also those who depended on American agriculture for their livelihood.

But who could blame them?  In the 1960’s Farm household income had been below the national average, and with the “good times” of the seventies it was higher than the national average every year except for one.  Unfortunately, this golden era did not continue, and by the 1980’s tight money, high interest rates and a nearly 60% drop in some farmland value became the farmers’ demise.

So with these circumstances, we can be thankful that Dr. Farmer saw the need and devoted much of his professional life to helping rural America.  He let folks know that they were not alone and that they were not failures.  His advice on dealing with stress and coping with issues helped many get through those difficult times.

Times such as those during the farm crisis can happen again, and we must always be mindful of the potential of this occurring.  I hope today’s farmer is wise enough to put aside their feelings of pride and self-sufficiency in order to accept counseling, should the need arise, from professionals like Dr. Farmer.  Fortunately, he has found someone to step into his shoes – Dr. Mike Rosmann, an Iowa farmer and psychologist will be taking over the column. Thank you Dr. Farmer, and welcome, Dr. Rosmann!

A family that custom harvests grain purchased their 94th – 100th International combines last week at an event held for them, the newest members of the 100 Unit Club.

An article in the Grand Island Independent documented the event, as did a team from Titan Machinery’s SRC (Shared Resource Center) from West Fargo, ND. The Evansville, MN based Johnson family, which operates Johnson Harvesting, started their International/Case IH buying with an International 1460 combine in 1980. They purchased six Case IH 8120 combines from their Titan Machinery dealership in Elbow Lake, MN and salesman Troy Johnsrud.

Mix and cook in crock pot, on high to start, then switching to low. Make sure cheese is melted.
I use a combination of Great Northern, Navy, Butter and Cannellini beans. Reduce the amount of cheese if you want your chili less “hot”. I also find I do not have to thicken.
