Summertime Salad!

After last week’s chocolate covered Reese’s Peanut Butter and Oreo treats I thought I should focus on something a bit healthier.  I was trying to find some sort of salad that would go well with summertime eating and found one that gave me some ideas.  This particular recipe, however, said to serve the dish hot and that wasn’t what I was looking for.  So I came up with something using various thoughts, ideas and options that I believe would complement a night of grilling.  This recipe allows for options mentioned below.  I have dubbed this creation with what might look like a typographical error, so don’t be misled to believe I can’t spell!

Bacorn Salad

 

1- 16 oz. package frozen sweet corn

1- 2.8 oz.  package real bacon bits

Diced green pepper (I used half a pepper)

Diced red pepper (I used half a pepper)

Diced onion (I used 2-3 slices of a medium-size onion)

Diced garlic (I used 3-4 cloves)

 

Cook corn according to package instructions and cool.  Then add other ingredients.  You’re done!  This salad can be eaten just as it is or you can choose to add a dressing (Ranch with Bacon for instance) or marinade (perhaps some Grill Mates Zesty Herb or Mesquite).  This salad was quick, easy and colorful.
